Roasted Red Bell Pepper - Walnut Pesto with Penne Pasta


There are some days when we run out of Veggies and we may be in a situation forced to make something for dinner ,right?  at least some of you may nod 'yes'. Well, i have faced this situation like a couple of times now.Its like very very hard to decide on a simple dinner when you have a very picky eater at home, and its kind of hard to find out what is the little ones current favorite. Yesterday i  asked her whether she wanted a cookie in evening and all of sudden out of blue she wanted. Idly at that moment  now where will i go for Idly when i don't have any Idly batter at home.


Sometimes even the left over veggies gives you ideas right? I won't say this Pasta came out of from the left over veggies, but i luckily i had all these veggies in hand. Having made this before and knowing that my little girl loves this i made it again ; Pasta - mixed with the Red Bell Pepper Pesto is kind of loved by all of us, and the little one loves it to the fullest.
We do have a love for Pastas but it should have some spice touch to it, i have added a bit of our taste to this recipe. This is how we love it at home.
Pepper Roasted with walnuts and spices and ground to a smooth paste, it gives in so much flavour.

Roasted Red Bell Pepper -Walnut Pesto with Penne Pasta

Ingredients
2 cups Penne Pasta ( cooked as per instructions in the pack )
1 Zucchini ( cut in half moon )
7-8 Mushroon ( sliced , i used Crimini Mushrooms )
1/4 cup Green Peas ( i used the frozen ones )
2-3 Garlic Pods ( chopped )
1/2 tsp Red Chili Flakes / Crushed Pepper flakes ( adjust )
1/2 tsp Herbs De Provence ( opt , or any Italian spice mix )
Red Bell Pepper - Walnut Pesto as needed ( Recipe Follows )
Parmesan Cheese as needed
Olive Oil
Salt & Pepper

Method :

Heat oil in pan and saute garlic, (do not burn it ), add in the zucchini , mushrooms and peas saute until tender but not mushy ( it should still have the crunch ).
Add in Pasta , chili flakes, herbs de provence , pesto , salt as needed  and mix well.
Add in the Pesto as needed, ( i added the whole pesto ).
Serve in a plate and sprinkle with  Parm cheese &  red chili flakes.





Red Bell Pepper & Walnut Pesto

Ingredients:
1 Big Red Bell Pepper / Capsicum ( cut in cubes )
1/4 cup Walnut ( chopped )
5 -6 Garlic pods ( sliced )
1 tsp Red chilli flakes
1 tsp Herbs De Provence
1 - 2 tbsp Olive Oil
Salt &   Pepper

Method:

In a large bowl mix everything until well coated and spread on to a baking sheet.
Arrange your oven to the lowest and broil the veggies for a few mins until cooked and charred, do toss it in between. Once done cool it and blend everything together and use it as required.
