Avocado Ice - Cream


       My little girl loves to have something sweet after lunch and i wont complain her for that; after all  she is just following her mommy dear :). We both enjoy a few minutes of licking off some cool flavoured yogurts most of the time after lunch, and we love that mommy - daughter time. So now adays as Summer is peeking out she keeps on asking me for Ice - cream. So i was all ready to make some Home-made Mango Ice cream and brought all the ingredients too. In between i happened to go through my recipe book, which i use to jot down all recipes i need to try and feel interested.


An year ago when we had the usual Doctor visit for Little Cuppy Cake, i got to read an Avocado Ice Cream recipe in a magazine i found there, i just read the ingredients and then it was time to meet the Doctor, so coming back home i jotted it down and wanted to try it out sometime.
I had bought a pack of Avocados just two days before, after making Gaucamole a day before didn't want to repeat it again , and the rest was sitting there staring at me , and before me knowing itself i was sure to make some Avocado Ice- Cream.
Avocado being naturally buttery on its own gave the Ice - Cream extra creamy, and adding lemon to it gave it an extra flavour too.

Avocado Ice - Cream 

Ingredients:
2 Avocadoes ( i used Hass Avocadoes )
1 8oz Cool Whip Tub
3/4  cup Sugar  ( i used just 1/2 cup )
1/2 cup Milk
Juice from 1/2 a Lemon
1/2 tsp Lemon zest

Method:
Blend together Milk + Avocado and Sugar to smooth in a blender or a food processor.
Add in Lemon zest and Juice and blend again.
Whip together Cool whip + Avocado mixture until well mixed.
Pour it into a Glass / Plastic container and freeze for 5 - 6 hrs.
Serve by topping with nuts.

  3. I feel like grabbing that bowl from the screen... absolutely love it... it reminds me that I haven't made icecream at home for ages, gotta make some soon... :)
