1 cup rice ( i used basmati) cooked and cooled
1 cup coconut ( grated )
1 tsp channa dal
1 tsp mustard seeds
2-3 red chillies
few curry leaves
salt to taste
oil ( preferably coconut oil )
Heat oil in a kadai and pop mustard seeds, channa dal, red chillies and curry leaves.
Add grated coconut and stir in for a few minutes.
Add the rice and mix well, serve hot with mint chutney or pickle.
