Spinach Stir fry with Coconut












       Hi friends, we reached home a week back and was on jetlag, we had a lovely hectic time in India with all family occassions but at the same time we were fed with the most yummy aunthetic or in my way "Nadan" homemade food from each and every home that we visited. But for all those great days and food, now im suffering totally struck with homesickness and laziness, and i know i cant be that way for long, and in no way is my toddler going to leave me free. I know i have been missing for 2 months and there are tons of  yummy foods and updates from the blog world and need to keep up with , and need to work fast !!!!
      So now with all the unpacking and cleaning and running behind my little one i managed myself to cook some simple yet the comfort food for us; Cheera Thoran/ Keerai Poriyal / Spinach Stir fry with Coconut ; a very simple dish, but please do not mistake; the Spinach used here is NOT  Palak. This post is about a kind of very simple Kerala lunch, Rice served with Spiced Butter Milk / Kachiya Moru , Cheera Thoran &  Fish Fry and Pickle. This is the kind of lunch we are happy with, and also slowly giving me way to the good old routine days.

Cheera Thoran / Spinach Stir fry with coconut
Ingredients:
3 cups Spinach ( cleaned and chopped )
1/2 cup grated Coconut
1/2 tsp Jeera / Cumin
1/2 tsp Red Chili Powder
1/4 tsp Turmeric Powder
1-2 Pearl Onion
Salt to taste
Oil

For temering:
1 tsp Mustard
2 -3 Dry Red Chili
1 Crushed Garlic
Few Curry leaves



Method:
  • Wash and drain the spinach. Chop it. 
  • Coarse grind coconut, jeera, chili powder, turmeric, onion.
  • Heat oil in a kadai and pop mustard following dry chili, curry leaves & garlic.
  • Add in the leaves and stir , when it starts to wilt add in the coconut mix , salt and stir well.
  • Cook untill all the water has evaporated .
  • Serve with rice as a side dish.
Serving ideas : Rice, Spiced Butter Milk / Kachiya moru, Fish Fry

Notes: You can use the stems to make Cheera Thandu Pulin Curry
