Mango - Mint Cooler



               Summer is getting hotter day by day , and we are just gulping down every drop of liquid possible. I feel the summer gets hottest during the weekends, and weekdays are kind of adjustable.
Nowadays we have started our new way of drinking up our fruits , yes , we are enjoying are frozen fruit smoothies most of the time possible.



Yes fruits are getting over in no time now a days. Even our little lady who is not so found of fruits, is extremely happy in enjoying her Frozen Drink. She loves Jamba Juice , and finishes of her drink happily , i wished she had the same happiness in finishing her evening cup of Milk. I have such a hard time to make her drink it all. But when it comes to this special Home -made Frozen Fruit Smoothie , its all happiness !!!



This is a Pinterest inspired drink that i got to try recently and we enjoyed the whole jug within minutes. This drink also seems to work perfect for Summer Birthday Parties at Parks. The Mint - Sugar Syrup recipe was from here.



Mango - Mint Cooler

Ingredients:

2 cups of Mango Pulp ( chilled ) ( naked brand Mango Smoothie drink works fine )
3 - 4 cups of Sparkling Water / Unflavored Soda ( chilled )
1/2 of a Lemon ( squeezed  & strained )
2 tbsp Sugar
Mint Leaves ( use more as needed )

Method:

In a sauce pan boil together 3/4 cup of Water +  7- 8 mint leaves torn + 2 tbsp Sugar , boil until the sugar dissolves , let it boil for a few more mins, strain it and let it cool , refrigerate until used.

In a jug, mix together Mango Pulp + Lemon + Mint Syrup and pour in the chilled sparkling water , and serve cold.

Nutella Cold Coffee



I would say this is the most soothing at the same time the Most Addictive drink of all. I am a huge huge fan of Cold Coffee. Back during college days, this was the only drink that i used to have any where , any time and everywhere. I was too much hooked to this. Coming to the US Starbucks Frappuccino was my fav , i can have it in any cold weather. I used to make my version of cold coffee at home. I was so new to Nutella didn't how chocolaty it would be, because i just hate the taste of milk chocolate, being lucky got to taste it from my friend's home , then and there i was HOOKED.  Nutella is now a  home fav, well i'll say totally keeping hubby dear apart, myself and the little one is so in love with Nutella.


When i found this recipe at Jeyashri's Kitchen i just didn't had to think twice to try it out. And now i'm hooked again, i totally feel nostalgic while having this Cuppa Cold Coffee; going back to the good old college days and missing my dear friends. You can find me making this at anytime of the day, may be morning , or lunch , or evening or even night just before going to bed and yeah!!! even during winter seasons :). I guess i can happily make it through out the day too. Well while making this , i really do not go with the measurements , its our taste that matters, i love the coffee flavor to overpower the Nutella, so i adjust accordingly. Do try it out, im sure you will Love this. 

Nutella Cold Coffee


Ingredients:
2 cups Milk ( chilled )
3 tbsp Nutella
3 tsp Instant Coffee ( i love the coffee flavor more, you can adjust to your taste )
1 tbsp Sugar ( opt , i did not use it)
2 - 3 ice cubes ( if needed, i used it )

Method:
 Blend all the ingredients together in a blender and blend until frothy. Serve in a glass and sprinkle with some coffee powder.
Top it with some whipped cream .

Kesar Mango Lassi


      Well having Halloween Treats everywhere i know this is no time i post something " Summery ". But we love Mangoes and every time we  have mangoes in stock at home, we make it a point to make Lassi atleast once or twice. We both really do not need any other way to consume Mangoes, just fresh ripe mangoes and we can finish it off in no time, and our dear little one is no less in that way. She Lovessssss Mangoes.







I had  2 more mangoes left in my fruit basket waiting for us and for a change i made it into this thick creamy yummy drink Lassi. Fresh ripped Mangoes pureed with thick yogurt into a very smooth special Indian drink.
Kesar Mango Lassi


Ingredients:
1 ripe Mango ( cut in cubes )
2 cups Curd
1  - 2 tbsp Sugar ( opt )
1 Cardamom
1 pinch of Kesar / Safforn
1/4 cup Milk / Water ( opt )

Method:

Puree cubed Mangoes , kesar, and cardamom together, in a blender.
Add in curd, sugar and blend again, if too thick add milk and blend again.
Pour in a glass ; garnish with kesar and pistachios serve chilled.

Spiced Green Mango & Spiced ButterMilk



Summer is so so amazing back in Kerala. I guess its just the same everywhere , people have great times in parks, doing different activities which they enjoy. The most amazing part is that you get to have so much varieties of fruits. Back at home we just enjoy summer with lots and lots of raw as well as fruit mangoes. When mangoes get filled in our kitchen we used to have a special treat with a bowl of spiced green mangoes. This is not much recipe oriented post, but im much sure that anyone who tastes is going to go crazy over this.


Summer also indicates that we need to take in lots of liquid be that in any form. Spiced butter milk is one  drink that is made most of the times during summer season, to fight with the hot weather a glass of buttermilk would be just perfect. A bowl full of Spiced Mango is well accompanied with a glass full of Spiced Buttermilk. Im sure you will try this out and surely would fall in love with this combo.

Spiced Green Mango & Spiced Buttermilk

Ingredients:

1 Unripe Mango ( chopped into small small pieces)
2 - 3  Dried Red Chili broken ( adjust accordingly )
4 tbsp Coconut Oil ( do not substitute with any other oil )
salt 

For the Buttermilk:
1 cup Yogurt ( beaten well )
1/2 cup Water
1 inch Ginger
1 Green Chili
Few Curry leaves
Salt

Method:
Clean and cut mango into small small pieces.
Put all the ingredients in a bowl and mix well.
Serve with a glass of Spiced Buttermilk.
Crush together ginger , green chilli and Curry leaves with a motar and pestle.
Mix it well with the beaten curd & water adding salt as needed.
Pour it out into a glass and serve.
